Middle Eastern Baba Ghanoush Recipe (Baingan Bharta) by Umme Shifa Kitchen

Babaganoush also spelled baba ghanuj or baba ghanoush or بینگن کا برتا . It is a Middle Eastern vegan aubergine/eggplant dip with great texture and smoky flavour! It’s made with roasted aubergine/eggplant, tomatoes, onion, bell pepper, garlic, olive oil, lemon juice, parsley, and salt! for serving can be added nuts, mint ect.

The recipe will serve 4 people

Ingredients

2 eggplant/aubergines
1 onion (or green onion)
Half cup coriander
1 tomato, finely chopped
2 green chilies
2 tbsp lemon juice
1/2 teaspoon salt to taste
